Sumario:A world with few certainties and in constant crisis leads to the need to see the future with greater clarity, leading to the construction of foresight and territorial planning. Analyze the productive factors of the agri-food sector and the agrifood chains that intervene in the processes of production, transformation, conservation and / or commercialization of food in order to know current and future scenarios in the promotion of the local and regional development of said sector, implies using analysis tools aimed at generating proposals in the integration processes that are part of agrifood chains. On the other hand, considering that the department was constituted in an "oasis" fed by the Andean Diamante and Atuel rivers, which are essential for the irrigation of the crops and the development of the life, it has been presented in the last eight years a decrease in the average flow of these rivers, currently generating a "water crisis". In this sense, it is proposed to identify environmental problems that affect regional economic sustainability and the development of the social and labor context in the agri-food sector. The "environmental conditions" that affect the development of the agro-alimentary sector, the processes of production and commercialization, such as the transformation and industrialization of raw materials that are developed in the organizations of the sector and the policies in which they should be framed will be analyzed. criteria of regional sustainability and contribute to the development of the social and labor context in the local and regional scope. This also includes all those regulatory aspects related to food production, food management and conservation processes, which must be considered, cared for and respected when working with this type of products.
