The demand function was calculated, one of them is the average of the 4 years and the others are annuals. The results indicate a progressive increase of the sales through the years. On the one hand it was verified a displacement of the demand function caused by the greater acceptation of the product, and on the other hand, especialty in the last year, the elaslicity of the function has increased. This results indicate that to increase rapidly the consumption it will be necessary to make an effort in arder to divulge the virtues of the product, particularty its positive effect as healthy food, and in this way the demand function will continue to move to the right, producing an increase of the sales without a significant decrease of the prices for the producer. Se ha realizado un estudio de mercado para determinar las posibilidades de expansión del cultivo del radicchio en la Argentina, produciéndolo e intentando su venia en la mayor parte de los grandes mercados de nuestro país. Se han calculado las funciones demanda, una que promedia 4 años de ensayos y otras anuales. Los resultados obtenidos indican un progresivo incremento de las venias. Por una parte, se ha verificado un desplazamiento de la función demanda causado por la mayor aceptación del producto y por otra, sobre todo en el último año, ha aumentado la elasticidad de la función. Para incrementar rápidamente el consumo será necesario difundir las virtudes alimentarias del producto. Al desplazarse positivamente la función demanda aumentarán las ventas sin una significativa caída de precios al productor. |
