The objective of this work was to isolate native strains of lactic acid bacteria with properties of industrial interest from fresh blueberries. Native strains were isolated on MRS agar and subjected to preliminary identification. Antagonistic activity against pathogenic and indicator microorganisms was determined. Other tests carried out were: resistance to pH 3; growth at different temperatures, bile salts (1%) and high concentration of sodium chloride (6.5%); production of exopolysaccharides (EPS); and characterization of extracellular antimicrobial metabolites. Ten native strains preliminarily characterized as lactic acid bacteria were isolated. The Ar2 strain, identified by molecular methods as Weissella confusa, showed the highest inhibitory activity against Escherichia coli, Listeria monocytogenes and Salmonella Enteritidis. In addition, it resisted pH 3, grew in MRS medium added with bile salts (1%), produced EPS and extracellular bacteriocin-like metabolites with anti-Listeria monocytogenes effect. Consequently, the native lactic strain Weissella confusa Ar2 could potentially be applied in the production of innovative fruit foods either as a bioprotective microorganism, as a producer of natural thickeners or as a probiotic culture. Keywords: Lactic acid bacteria, fruit, bioprotection, probiotics, exopolysaccharides Las bacterias lácticas pueden poseer propiedades funcionales de interés para elaboración de alimentos frutales innovadores. El objetivo de este trabajo fue aislar cepas nativas de bacterias lácticas con propiedades de interés industrial, a partir de arándanos frescos. Las cepas se aislaron en MRS agar, se sometieron a identificación preliminar y se determinó: actividad antagónica frente a microorganismos indicadores patógenos e indicadores; resistencia a pH 3; crecimiento ante diferentes temperaturas, sales biliares (1 %) y alta concentración de cloruro de sodio (6,5 %); producción de exopolisacáridos (EPS) y caracterización de metabolitos antimicrobianos extracelulares. Se aislaron 10 cepas caracterizadas preliminarmente como bacterias lácticas, de las cuales la cepa Ar2, identificada por métodos moleculares como perteneciente a la especie Weissella confusa, fue la que presentó mayor actividad inhibitoria frente a Escherichia coli, Listeria monocytogenes y Salmonella Enteritidis. Además, resistió pH 3, creció en medio MRS adicionado con sales biliares (1%), produjo EPS y metabolitos extracelulares tipo bacteriocina con efecto anti-Listeria monocytogenes. Por consiguiente, la cepa nativa Weissella confusa Ar2 podría ser potencialmente aplicada en elaboración de alimentos frutales innovadores ya sea como cultivo bioprotector, probiótico o productor de espesantes naturales.
