Sumario:Since PBL is an effective method of learning complex subjects based on the principle of using problems as a starting point for the acquisition of new knowledge, it is proposed to adapt the methodology and approach of PBL to use it as a method of approaching all the curricular contents of Food Analysis, developing them in the time allotted for the course and to evaluate the impact of this methodology on the students' learning. The curricular contents were selected and regrouped to be addressed in nine problems or "Cases" to be solved by the "Aspiring Food Detectives" during the fourteen weeks of the course. Each case was given a creative and motivating name and a guide material was prepared with an introduction and data for its resolution and activities both for the recovery of previous knowledge and for the study and application of the new contents through group work, with indication of the resources available for this purpose, including the expository classes. The impact, measured as students' perception by means of a survey, was very high and positive, highlighting the valuation of the fact of having worked on foods of daily use. Keywords: Problem – Based Learning, Food Analysis, Significative Learning, Food Detectives.
